my recipie has
1 cup heavy cream
2 tbs icing sugar
2 tbs piping gel
1tsp clear vanilla
I am wondering what does the piping gel do and do i really need it?Does Piping Gel Stabilize whipped cream?

I'm guessing the recipe you have there is the Wilton one. Wilton is always finding new and unusual (and unnecessary) ways to make you buy their products.
